Limber de coco con fresa or strawberry coconut ice pops are made with creamy coconut milk and strawberries. These tropical flavors pair perfectly together and make for a delicious frozen treat to enjoy all summer long!
In Puerto Rico, limber is traditionally made in small plastic cups. Once frozen, you flip the ice pop upside down and place it back in the cup to make it easier to eat.

Why is it called limber?
Limber got its name from pilot Charles A. Lindbergh, who landed on the island in 1928. According to locals, Lindbergh was greeted with a frozen juice that later was referred to as limbers. Limber is how many in Puerto Rico pronounce the pilot’s name.
Limber comes in many different flavors but limber de coco is my favorite! The ingredients are simple and once you put everything together it tastes magical. Creamy coconut milk combines with sweet cream of coconut, coconut water, coconut flakes, vanilla and also cinnamon for a beautiful fusion of flavors. Adding strawberries to the mix adds a touch of vibrant flavor. If you enjoy the taste of strawberries, you will love this recipe.
Limber de coco con fresa ingredients:
- Coconut milk
- Evaporated milk
- Cream of coconut
- Coconut water
- Coconut flakes or fresh coconut chunks
- Fresh strawberries
- Vanilla extract
- Cinnamon powder

How to make limber de coco con fresa?
To a blender, add all ingredients, except the strawberries, and blend until smooth. Slice fresh strawberries and add them to a bowl. Mash the strawberries into small chunks. Add some of the mashed strawberries to the plastic cups, swirling and pressing the strawberries around the sides of the cups.

Pour the coconut mixture into plastic cups. Sprinkle with coconut flakes on top, if desired. Cover with lids and place in the freezer. After about 2 hours, add popsicle sticks, if using.

Freeze for at least 6-8 hours or overnight. The size of what you use to make the ice pops will determine how long they take to freeze. Serve and enjoy. ¡Buen provecho!

Limber de Coco con Fresa (Strawberry Coconut Ice Pops)
Equipment
- 8 plastic cups with lids see notes for links
- popsicle sticks optional
- Popsicle tray optional
Ingredients
- 1 can full-fat coconut milk 13 oz
- 1 can evaporated milk 12 oz
- 1 can cream of coconut, sweetened 15 oz
- 1/4 cup coconut water
- 1/2 cup coconut flakes, unsweetened or fresh coconut chunks
- 1 tsp vanilla extract
- 1/2 tsp cinnamon powder
- 1 cup strawberries, mashed
Instructions
