Limber de Coco con Fresa (Strawberry Coconut Ice Pops)

Limber de coco con fresa or strawberry coconut ice pops are made with creamy coconut milk and strawberries. These tropical flavors pair perfectly together and make for a delicious frozen treat to enjoy all summer long!

Ingredients
  

  • 1 can full-fat coconut milk 13 oz
  • 1 can evaporated milk 12 oz
  • 1 can cream of coconut, sweetened 15 oz
  • 1/4 cup coconut water
  • 1/2 cup coconut flakes, unsweetened or fresh coconut chunks
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon powder
  • 1 cup strawberries, mashed

Instructions
 

  • To a blender, add all ingredients except strawberries, and blend until smooth. 
  • Slice fresh strawberries and add them to a bowl. Mash the strawberries into small chunks. Add some of the mashed strawberries to the plastic cups, swirling and pressing the strawberries around the sides of the cups.
  • Pour mixture into plastic cups. Sprinkle with coconut flakes on top, if desired.
  • Cover with lids and place in the freezer. After about 2 hours, add popsicle sticks, if using.
  • Freeze for at least 6-8 hours or overnight. Serve and enjoy. ¡Buen provecho!
