Crispy pita chips are topped with hummus and tons of flavorful toppings like Kalamata olives, red onions, pickled jalapeños and more! Finish these off with cool tzatziki drizzle and crumbled feta cheese and you’ve got a delicious AND healthy snack that will blow your socks off!
My husband and I love snacking on homemade pita chips and hummus. One evening, I decided to spice things up and threw pickled jalapeños and banana peppers on top and my mind was blown. That’s when I came up with this idea of Mediterranean nachos. Of course, I immediately took to Google and saw a bunch of recipes for Mediterranean nachos so clearly my idea isn’t so original lol. But amazingly delicious nonetheless! My husband and I are pretty obsessed with these Mediterranean nachos and often enjoy a platter after we put the kids to bed!
How to make homemade pita chips?
Homemade pita chips are so easy to make and even more delicious when you enjoy them warm. Once you try them, you’ll NEVER buy store bought pita chips again, I promise!
I like to cut pita bread into eight slices, just like a pizza pie. I find that’s the perfect size pita chip. Then I like to drizzle my pita chips with olive oil and season with Trader Joe’s ranch seasoning. Pure perfection!
My favorite way to cook pita chips is in an air fryer. I cook at 350 degrees for about 4 minutes and toss them around each minute to make sure the pita chips don’t burn.
How to make beet hummus?
For this particular recipe, I used beet hummus but you can use whatever hummus you like. Beet hummus has such a beautiful, bright shade of pink and I wanted to add a pop of color to my photos, for aesthetics of course!
To make beet hummus, you’ll need to roast a small beet in the oven. I cook it just like a baked potato, wrapped in foil at 375 degrees for about 1 hour.
Once cooked, the beet should be tender. Cut into small chunks and set aside. Once you have all your ingredients together, throw everything into a food processor and you’ll have smooth, creamy hummus. Easy, peasy!

How to make Mediterranean nachos?
Mediterranean nachos are basically like Mexican nachos, except you’re swapping out the tortilla chips for pita chips and the traditional toppings for Mediterranean ingredients like hummus, Kalamata olives, cucumber, tzatziki, etc. You can customize this dish however you like. The possibilities are endless. I would love to add falafels and tabbouleh too!
I added an edible flower on top of my dish to make it more visually appealing. Edible flowers are so beautiful, I recently started buying them and I think they elevate my dishes so much! Mediterranean Nachos
Ingredients
Beet hummus
- 1 small roasted beet
- 15 oz chickpeas, drained
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 2 tbsp tahini
- 1/4 cup extra virgin olive oil
- salt, to taste
Pita chips
- 4 loaves pita bread, sliced
- 4 tsp extra virgin olive oil
- 1-2 tbsp Trader Joe's ranch seasoning
Toppings
- Kalamata olives
- Pickled jalapeño
- Banana peppers
- Tomatoes, diced
- Cucumber, diced
- Red onion, diced
- Parsley, chopped
- Feta cheese, crumbled
- Tzatziki sauce
- Edible flowers, optional
Instructions
Beet hummus
- Preheat oven to 375 degrees F (190 C), remove the stem root from your beet. Wash thoroughly and wrap in foil. Roast for 1 hour or until tender.
- I like to sauté the garlic in olive oil because I think it tastes better that way. If you choose to cook your garlic, go ahead and do that now. If not, skip to next step.
- Add all ingredients in a blender or food processor and blend until smooth. Adjust seasoning, as necessary.
Pita chips
- Slice each loaf of pita into eight slices, like a pizza pie! Drizzle with olive oil. Sprinkle with ranch seasoning.
- Cook in air fryer at 375 degrees for about 4 minutes. Important: toss the pita chips each minute to ensure they cook evenly and don't burn.
Mediterranean nachos
- Place pita chips on a large plate or serving tray.
- Add a big scoop of hummus in the center.
- Add all toppings.
- Drizzle with tzatziki sauce.
- Top with edible flowers, if using.
