Gingerbread Smoothie Recipe

‘Tis the season to indulge in holiday foods and drinks! One of my family’s favorite drinks, aside from coquito of course, are gingerbread smoothies. They taste just like gingerbread cookies but in smoothie form. If you enjoy the warm flavors of cinnamon, ginger and cloves, this recipe is for you!

One thing I love about gingerbread smoothies is that they are both healthy and delicious. My children enjoy them with a dollop of whipped cream on top. A gingerbread man garnish is also a huge plus! I found these adorable gingerbread cookies at Trader Joe’s.

Ingredients for making gingerbread smoothie:

  • coconut milk
  • condensed coconut milk
  • banana or apple
  • cinnamon
  • ginger, ground
  • cloves, ground
  • nutmeg
  • vanilla extract
  • ice

How to make a gingerbread smoothie

Gingerbread smoothies are super easy to make and even more fun when you have little helpers! You can use either apple or banana as the fruit. Frozen fruit works best, as we want this smoothie to thick and icy cold. But if your fruit it not frozen, that’s okay. Just add some extra ice. 

Place all ingredients in a blender and blend until smooth. I sometimes like to add a scoop of vanilla ice cream if we are having the smoothies for dessert. It makes it extra thick and creamy, so good! Of course, then it would be more of a milkshake than a smoothie, but delicious either way! Top with whipped cream, a sprinkle of cinnamon and also a gingerbread cookie for the cutest touch.

Can you make it vegan?

Yes, this recipe is vegan if you use plant-based whipped cream. If you want to add a scoop of ice cream, just use vegan ice cream! I like to use coconut milk and condensed coconut milk, but you can use almond or oat milk. Any milk option works well. Condensed oat milk is another great plant-based option.

  • 1 Blender

Ingredientes
  

  • 1 cup coconut milk or milk of choice
  • 1/2 cup condensed coconut milk sweetened
  • 1 banana, frozen can sub with apple
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1 cup ice
  • whipped cream, for topping optional
  • gingerbread cookies, for garnish optional

Instructions
 

  • Place all ingredients in a blender. Blend until smooth.
  • Top with whipped cream, a sprinkle of cinnamon and a gingerbread cookie. Enjoy!
