Patitas de pollo guisadas or stewed chicken feet are a delicacy in the Caribbean. Chicken feet are a natural source of collagen, which strengthens bones, skin, hair, and nails. Also, they are incredibly delicious. The gravy that forms when cooking chicken feet is rich and thick and packed with nutrients. Although chicken feet are great for soups, this stew recipe is insanely delicious! *finger-lickin good*
Along with white rice, habichuelas guisadas, tostones, and avocado this dish is the ultimate Puerto Rican comfort food. Save my patitas de pollo recipe for a delicious weeknight meal.

Whenever I make patitas de pollo or pollo guisado, I use the Dominican method of caramelizing sugar to brown the chicken before stewing it. I think it adds depth of flavor and elevates the dish to new levels!
Are chicken feet healthy to eat?
Yes! Chicken feet are a natural source of collagen which improves joint health and digestion, and provides protein and minerals such as calcium and magnesium, helping to prevent bone diseases and improving skin elasticity. They are beneficial for longevity and the recovery of skin, hair, and joints, and can be used in broths and stews. ¡Colágeno natural!

How to make stewed chicken feet?
Clean the chicken feet with cold water and white vinegar or lemon juice. Remove the nails by clipping them with kitchen scissors. Season the chicken with all of the spices.

Place a large frying pan over medium high heat. Add sugar and allow it to brown. Add chicken feet and brown on all sides. Allow the chicken to turn brown but be careful not to burn. Remove the chicken from the pan and set aside. *See notes for pressure cooker method.
Add sofrito, tomato sauce and chicken bouillon to the pan. Cook until it becomes fragrant, about 5 minutes. Add the chicken feet back to the pan. Stir to coat in the sofrito sauce, add water and cover. Reduce the heat to low. Simmer for 20 minutes until the water has reduced and the chicken has turned dark brown.
Stir the chicken to coat in the sauce again and add a little more water. Cover and continue to cook for about 20 more minutes. At this point, the chicken feet should be tender and a rich dark brown color. The end result is magical, trust me! Serve and enjoy. ¡Buen provecho!

How to cook chicken feet in a pressure cooker?
Follow the same steps in the recipe up until browning the chicken. Then in a pressure cooker, add sofrito, chicken bouillon and tomato sauce. Sauté until fragrant and then add the chicken feet and enough water to cover. Bring to a boil. Close the pressure cooker and cook on medium-high heat for 25 minutes. The pressure cooker will cut down about 20-25 minutes of cook time as opposed to using the traditional method. The method would be similar if you have an instant pot as well. Enjoy!
This is the pressure cooker I use in all my recipes. It works great!
What to serve with patitas de pollo guisadas?
Patitas de pollo guisadas are typically served with white rice, habichuelas guisadas and salad. Some popular side dishes include tostones, platano maduro and also avocado. Other side dishes that compliment this dish well are ensalada de coditos o ensalada de papa.
This dish stores well in the refrigerator for excellent leftovers you can enjoy the next day! Just warm on the stove over low heat and it’s just as delicious as it was the day before.
