Patitas de Pollo Guisadas (Stewed Chicken Feet)
Patitas de pollo guisadas or stewed chicken feet are a delicacy in the Caribbean. The gravy that forms when cooking chicken feet is rich and thick and packed with nutrients. Save this stew recipe, it's insanely delicious!

- 2 lbs chicken feet cleaned and trimmed
- white vinegar or lemon juice for washing chicken
- 2 enteros garlic crushed
- 1/2 red onion picadito
- 1/2 pimiento rojo picadito
- 1/2 green bell pepper picadito
- 1/2 taza fresh cilantro chopped
- 1/2 tbsp adobo
- 1/4 tbsp sazón
- 1/2 tsp ground oregano
- 1/4 tsp ajo en polvo
- 1/4 tsp cebolla en polvo
- 2 tbsp olive oil
- 1 tbsp white vinegar
- 1 tbsp soy sauce
- sal to taste
- 1 tsp azúcar blanca for browning
- 2 tbsp sofrito
- 1 tbsp chicken bouillon paste Better than Bouillon
- 1/4 taza salsa de tomate
- 1/2 taza water more, if needed
Clean chicken with cold water and white vinegar or lemon juice. Remove the nails by clipping them with kitchen scissors.
Season the chicken with all of the spices. *See notes for pressure cooker method.
Place a large frying pan over medium high heat. Add sugar and allow it to brown.
Add chicken feet and brown on all sides. Allow the chicken to turn brown but be careful not to burn. Remove the chicken from the pan and set aside.
Add sofrito, tomato sauce and chicken bouillon. Cook until it becomes fragrant, about 5 minutes.
Add the chicken feet back to the pan. Stir to coat in the sofrito sauce, add water and cover. Reduce the heat to low.
Simmer for 20 minutes until the water has reduced and the chicken has turned dark brown.
Stir the chicken to coat in the sauce again and add a little more water. Cover and continue to cook for about 20 more minutes.
At this point, the chicken feet should be tender and a rich dark brown color.

How to cook patitas de pollo guisadas in a pressure cooker?
Follow the same steps in the recipe up until browning the chicken. Then in a pressure cooker, add sofrito, chicken bouillon and tomato sauce. Sauté until fragrant and then add the chicken feet and enough water to cover. Bring to a boil. Close the pressure cooker and cook on medium-high heat for 25 minutes. The pressure cooker will cut down about 20-25 minutes of cook time as opposed to using the traditional method. The method would be similar if you have an instant pot as well. Enjoy!
