Limber de piña colada is bursting with the tropical flavors of coconut and pineapple in ice pop form. Piña colada is a cocktail made with cream of coconut, pineapple juice, rum, and ice. Creamy coconut blends with the bright flavor of pineapple for an irresistible combination.
These ice pops are alcohol free but sometimes I like to kick it up a notch by adding rum to the mix. I added rum to the recipe as an optional ingredient for those who want to make these ice pops for a 21+ crowd!
In Puerto Rico, limber is traditionally made in small plastic cups. Once frozen, you flip the ice pop upside down and place it back in the cup to make it easier to eat. I like adding a popsicle stick to make them easier to hold while eating. You could also use a popsicle mold to make popsicles or paletas.
What is limber?
What is a limber, anyway? Limber got its name from pilot Charles A. Lindbergh, who landed on the island in 1928. According to locals, Lindbergh was greeted with a frozen juice that later was referred to as limbers. Limber is how many in Puerto Rico pronounce the pilot’s name.
What are the main ingredients in piña colada?
Piña colada is made with cream of coconut, pineapple juice, rum, and ice. You can either blend the cocktail or shake it in a cocktail shaker. It is usually garnished with maraschino cherries and pineapple slices.
Traditional piña colada is made with white rum, but you can always experiment with different types and flavors of rum. Try a gold rum to bring a bit more warmth, or a spiced rum for more depth. You can also try coconut rum, pineapple rum, and other citrus-flavored rums work well too.
Limber de piña colada ingredients:
- Pineapple chunks
- Leche de coco
- Condensed milk
- Cream of coconut
- Pineapple juice
- Lime juice
- Coconut flakes
- Rum, optional
- Pineapple slices
- Maraschino cherries

You could also use frozen pineapple chunks and canned pineapple juice instead.
How to make piña colada ice pops?
To a blender, add all ingredients and mix until well combined. I prefer to only use half of the coconut cream and half of the condensed milk because both are sweetened and will result in overly sweet limber. Use less of each if you are watching your sugar intake or substitute with coconut milk or unsweetened coconut cream.
Skim excess foam from the top with a large spoon. Pour mixture into plastic cups and cover the cups with lids.
Place in the freezer and freeze for about 1-2 hours. When it’s halfway frozen, place a popsicle stick in the center, (if using sticks). Place back in the freezer and freeze for at least 6 hours or overnight. Serve with a pineapple slice and cherry on top. Enjoy!
I like using these 5 ounce cups with lids. It’s important to cover the limber to keep its flavor fresh.

- Popsicle tray opcional
Ingredientes
- 2 tazas fresh or frozen pineapple chunks
- 1 lata full-fat coconut milk
- 1/2 lata condensed milk
- 1/2 lata cream of coconut
- 8 oz jugo de piña
- 1 lime juiced
- 1/4 taza unsweetened coconut flakes opcional
- 1/2 taza rum (light or dark) opcional
- pineapple slices para adornar
- cerezas maraschino para adornar
Intrucciones
- To a blender, add all ingredients and mix until well combined.
