Limber de Piña Colada (Piña Colada Ice Pops)

Limber de piña colada is bursting with the tropical flavors of coconut and pineapple in ice pop form. Creamy coconut blends with the bright flavor of pineapple for an irresistible combination. Rum is optional, but highly recommended!

Equipment

  • 8 plastic cups with lids 5 oz see notes for links
  • popsicle sticks
  • Popsicle tray opcional

Ingredients
  

  • 2 tazas fresh or frozen pineapple chunks
  • 1 lata full-fat coconut milk
  • 1/2 lata condensed milk
  • 1/2 lata cream of coconut
  • 8 oz jugo de piña
  • 1 lime juiced
  • 1/4 taza unsweetened coconut flakes opcional
  • 1/2 taza rum (light or dark) opcional
  • pineapple slices para adornar
  • cerezas maraschino para adornar

Instructions
 

  • To a blender, add all ingredients and mix until well combined.
  • Skim excess foam from the top with a large spoon.
  • Pour mixture into plastic cups and cover the cups with lids.
  • Place in the freezer and freeze for about 1-2 hours. When it's halfway frozen, place a popsicle stick in the center, (if using sticks).
  • Place back in the freezer and freeze for at least 6 hours or overnight. Serve with a pineapple slice and cherry on top. Enjoy!
