Limber de piña colada is bursting with the tropical flavors of coconut and pineapple in ice pop form. Creamy coconut blends with the bright flavor of pineapple for an irresistible combination. Rum is optional, but highly recommended!
To a blender, add all ingredients and mix until well combined.
Skim excess foam from the top with a large spoon.
Pour mixture into plastic cups and cover the cups with lids.
Place in the freezer and freeze for about 1-2 hours. When it's halfway frozen, place a popsicle stick in the center, (if using sticks).
Place back in the freezer and freeze for at least 6 hours or overnight. Serve with a pineapple slice and cherry on top. Enjoy!
