Ingredients

  • 2 cups fresh raspberries
  • 2 tbsp chia seeds
  • 2 tbsp honey or raw cane sugar
  • 1 tbsp lemon juice, optional

Instructions

  • Heat raspberries in a saucepan over medium-high heat, stirring occasionally, until they are heated through and begin to break down and bubble. Mash the raspberries to your desired consistency.
  • Stir in the chia seeds and lemon juice until well combined. Add 1 or 2 tablespoons of sweetener, if needed.
  • Remove from heat and let cool for 5 minutes. The jam will thicken a lot as it cools down.
  • Store in a glass jar and refrigerate for up to 1 week or freeze for up to 3 months.
