Puerto Rican Sofrito

Puerto Rican sofrito is an aromatic blend of fresh vegetables, herbs and spices that is used as the base in most Latin American dishes. This blend of aromatics is wonderful for infusing your food with tons of flavor. It’s literally magic in a bottle!

Ingredients
  

  • 2 green peppers seeded and chopped
  • 1 red pepper seeded and chopped
  • 2 cubanelle peppers seeded and chopped
  • 6 ajíces dulces seeded and chopped
  • 2 yellow onions chopped
  • 1 head of garlic peeled and chopped
  • 2 plum tomatoes chopped
  • 1 bunch cilantro chopped
  • 1 bunch culantro chopped
  • 1/2 cup Spanish pimento stuffed olives
  • 1/2 cup white vinegar
  • 1 tbsp ground oregano optional

Instructions
 

  • Thoroughly rinse all ingredients and use a blender or food processor to blend sofrito in batches.
  • Start with the onions because they provide a lot of liquid when blended. Add the vinegar, as needed, while blending the rest of the ingredients.
  • Store sofrito in a sealed container. It will keep in the refrigerator for 2-3 weeks. Freeze any remainder for up to 6 months.

Store your sofrito in a sealed container like a mason jar or glass tupperware. In the refrigerator it will keep up to 2-3 weeks (the vinegar helps preserve it). In the freezer, it will keep up to 6 months. Since a batch of fresh sofrito is usually too much to use right away, it’s a good idea to freeze most of it. You can also use an ice tray to freeze sofrito in easy ready-to-use portions. Each ice cube measures approximately 1 tablespoon.
