Limber de Horchata
Limber de horchata or limber de ajonjolí is a delicious ice pop made with milk and toasted sesame seeds. This frozen treat has a nutty flavor profile similar to peanut butter. It is very refreshing and is perfect for cooling down in the summer heat.

- 1/2 cup white sesame seeds toasted
- 1 can condensed milk 14 oz
- 1 can evaporated milk 12 oz
- 1 cup milk
- 1 cup water
- 2 tbsp sugar optional
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/8 tsp salt
Place a pan over medium heat and add raw white sesame seeds. Stir frequently while making sure the sesame seeds remain in an even layer, so that they can toast evenly and not burn. Continue toasting the seeds until they turn golden. This should take about 5 minutes. Once toasted, remove the seeds from the pan.
To a blender, add all ingredients and mix until well combined. Blend on a high setting for about 1 minute so that all of the sesame seeds can disintegrate. This will ensure the mixture gets infused with all of the flavor from the toasted sesame seeds.
Strain the mixture to remove all of the crushed sesame seeds. Skim excess foam from the top of the limber mixture with a large spoon.
Pour mixture into plastic cups and sprinkle with toasted sesame seeds on top, if desired.
Place in the freezer. After about 2 hours, add popsicle sticks, if using.
Freeze for at least 6-8 hours or overnight. Serve and enjoy. ¡Buen provecho!
