Limber de coco is creamy, coconut ice typically made in plastic cups. In my version, I am making the traditional limber de coco recipe but using a popsicle tray to make coconut popsicles, also known as paletas de coco.
2cinnamon sticks or 1/2 ts cinnamon powdersee notes
Instructions
Add all ingredients to a large bowl. Stir until well combined.
Pour mixture into popsicle tray.
Freeze for at least 6-8 hours or overnight.

Tip:
If using cinnamon sticks, warm the mixture over low heat for 5 minutes to infuse with cinnamon flavor. Alternatively, you could add 1/2 tsp of cinnamon powder and no need to warm the mixture.
