Limber de Coco (Coconut Ice Pops)

Limber de coco or coconut ice pops are a creamy and delicious frozen treat traditionally made in plastic cups. Once frozen, you flip the ice pop upside down and place it back in the cup to make it easier to eat.

Equipment

  • 8 plastic cups with lids 5 oz see notes for links
  • popsicle sticks optional
  • Popsicle tray optional

Ingredients
  

  • 1 can full-fat coconut milk 13 oz
  • 1 can evaporated milk 12 oz
  • 1 can cream of coconut, sweetened 15 oz
  • 1/4 cup coconut water
  • 1/2 cup coconut flakes or fresh coconut chunks
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon powder

Instructions
 

  • To a blender, add all ingredients and blend until smooth. 
  • Pour mixture into plastic cups. Sprinkle with coconut flakes on top, if desired.
  • Cover with lids and place in the freezer. After about 2 hours, add popsicle sticks, if using.
  • Freeze for at least 6-8 hours or overnight. Serve and enjoy. ¡Buen provecho!
