Viral Yogurt Cheesecake with Guava
I made the viral yogurt cheesecake with guava sauce and it was delicious! Biscoff cookies and guava sauce bring it to the next level!

- 32 oz Greek yogurt plain or vanilla, full fat or low-fat for best results
- 1 taza guava paste 8 oz, diced
- 1/2 taza water
- 10 Biscoff cookies more for crumble topping
Make the guava sauce
Add guava paste to a saucepan with water and cook over medium heat, stirring frequently until smooth.
Remove from heat and allow to cool.
Fill a piping bag or squeeze bottle with the sauce. Store the remaining sauce in a mason jar in the refrigerator for up to 1 week.
Assemble the cheesecake
In an air-tight container, add a layer of Greek yogurt. Next, add the Biscoff cookies about 1/2 inch apart from each other. Then, drizzle with guava sauce.
Repeat the steps until the container is filled. Allow the cheesecake to set in the refrigerator for about 6 hours. You can also set in the freezer for about 1-2 hours until firm but not frozen solid.

Tips:
I recommend using full fat or low-fat Greek yogurt for best results. Higher fat will yield a richer and more cheesecake-like flavor and texture.
Flavor the yogurt will vanilla, crushed fruit, jam, syrup, or agave to your liking. Alternatively, you could top the cheesecake with fresh fruit, honey, jam, or syrup.
Allow the cheesecake to set in the freezer for 1-2 hours only. Otherwise, it will freeze solid and this will change the texture.

Can I use frozen guava puree instead?
Yes, you can use frozen guava pulp in place of guava paste. Follow the recipe below:
1 (14 oz) package of frozen guava pulp, thawed
1 cup white granulated sugar
1 tablespoon lime juice (optional)
Add ingredients to a saucepan and cook over medium heat for about 25 minutes, stirring frequently.

Can I make this ahead?
