Ingredients

Chicken Nuggets

  • 1 lb chicken breast, cubed
  • 3/4 taza pickle juice
  • 1 tbsp raw brown sugar
  • 1 taza all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 tazas breadcrumbs
  • 2 tbsp annato oil see notes
  • 1 tbsp paprika
  • 1 tbsp ajo en polvo
  • 1 tbsp dried dill
  • 2 tsp adobo or salt
  • 1/2 tsp pimienta negra
  • Drizzle peanut oil

Chick fil A sauce

  • 1/4 taza mayonnaise
  • 1 tbsp bbq sauce
  • 1 tbsp honey
  • 1 tsp mustard

Instructions

Chicken Nuggets

  • Clean chicken breasts and cut into cubes. Add to a bowl with the pickle juice and brown sugar. Stir until well combined. Cover and allow to marinate in the refrigerator for at least 30 minutes.
  • Add flour to a small bowl. In another bowl, whisk eggs and set aside.
  • In another bowl, mix together the bread crumbs and seasonings. Add annatto oil (if using) and stir into the breadcrumbs. This will give the nuggets a beautiful golden brown color!
  • Dip each piece of chicken in flour, then egg, then coat in the bread crumbs. Brush nuggets with a little peanut oil and cook in air fryer at 375 degrees for 10-15 minutes, until cooked through and golden brown.

Chick fil A sauce

  • Add mayonnaise, bbq sauce, honey and mustard in a small bowl. Stir until well combined.

Notes

To make annatto oil, combine annatto seeds and your oil of choice (I like olive or peanut oil) in a saucepan and heat over medium high heat. When bubbles start to form around the annatto seeds, turn off the heat and let the seeds soak in the oil for 1 to 2 minutes. Be careful not to burn the seeds because the oil will taste bitter. Transfer the oil to a container using a strainer to filter out the annatto seeds.
