Dice the chorizo and set aside. Place a pan over medium heat and add the chorizo. Add butter, olive oil, garlic, onions and cilantro. Add about 3 cups of oil. The oil should come to about 325\u2109-350\u2109. Peel the green plantains and cut them into 1-inch slices.&nbsp;<\/p>\n\n\n\n<p class=\"\">Fry the plantains for about 10 minutes, flipping them a few times until golden brown on both sides. The plantains should fry low and slow to ensure they fully cook through, without burning.<\/p>\n\n\n\n<p class=\"\">Place the cooked plantains on a paper towel-lined plate.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Mash the mofongo<\/h4>\n\n\n\n<p class=\"\">To a mortar and pestle (pil\u00f3n), add the fried plantains, garlic butter sauce, broth, chicharrones and chorizo, (if using). Mash everything until well combined. Season with salt to taste.<\/p>\n\n\n\n<p class=\"\">For perfectly shaped mofongo, add the mofongo to a small bowl and press gently to form a solid shape.&nbsp;Flip the bowl onto a plate and serve the mofongo with <strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/camarones-al-ajillo-garlic-shrimp\/\" target=\"_blank\" rel=\"noreferrer noopener\">garlic shrimp<\/a><\/strong> or meat or choice. I feel it tastes much better that way and helps eliminate the strong taste of raw garlic, which can overpower this dish.<\/li>\n\n\n\n<li class=\"\">I like adding a combination of olive oil and butter as well as chicken broth to the mofongo to help make it moist and flavorful.&nbsp;<\/li>\n\n\n\n<li class=\"\">I also add onions and cilantro to the garlic butter to elevate the flavors even more.<\/li>\n\n\n\n<li class=\"\">For perfectly shaped mofongo, add the mofongo to a small bowl and press gently to form a solid shape.<\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"\"><strong>Pro Tip:<\/strong> Add a bit of cooking spray to the bowl and use a knife to run around the edges of the bowl to help release the mofongo.<\/p>\n<\/blockquote>\n\n\n\n<p class=\"\">If you love garlic shrimp, check out my recipe for <strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/camarones-al-ajillo-garlic-shrimp\/\" target=\"_blank\" rel=\"noreferrer noopener\">camarones al ajillo<\/a><\/strong>.
