Its popularity compares to no other dish in Puerto Rico. No matter the occasion, you will always find a caldero of arroz con gandules at every party or family gathering.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full is-resized\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/curlsnpearlsss.com\/wp-content\/uploads\/2023\/11\/arroz-con-gandules-2.jpg?ssl=1\" alt=\"arroz con gandules\" class=\"wp-image-7010\" style=\"width:450px\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">What is arroz con gandules?<\/h3>\n\n\n\n<p class=\"\">Arroz con gandules is a savory dish made with yellow rice and pigeon peas. To achieve its traditional yellow color, achiote oil is added but you can also use saz\u00f3n. Achiote is annatto in Spanish. Other ingredients like <strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/puerto-rican-sofrito\/\">sofrito<\/a><\/strong>, <strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/aceite-de-achiote-annatto-oil\/\" target=\"_blank\" rel=\"noreferrer noopener\">annatto oil<\/a><\/strong> or aceite de achiote, herbs, and spices give this delicious dish bold flavor!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">How to make arroz con gandules?<\/h3>\n\n\n\n<p class=\"\">Everyone has their own version of arroz con gandules. Authentic arroz con gandules typically has ham or bacon in it. However, I prefer to omit the pork. It\u2019s healthier and honestly tastes just as good!&nbsp;But you decide what works best for you!<\/p>\n\n\n\n<p class=\"\">To cook the arroz con gandules you will need a caldero. A caldero is an aluminum pot with rounded sides, a tight fitting lid and superior heat distribution. Calderos are used to cook rice, beans, braise meat and also simmer stews and soups. Basically, you can cook ANYTHING in a caldero and every Puerto Rican household has one.&nbsp;<\/p>\n\n\n\n<p class=\"\">Calderos are rich in history and also culture. They are passed down generation to generation and are cherished like prized possessions in most families. \u201cThis was my Abuela\u2019s caldero,\u201d I\u2019d sometimes hear Mami say proudly as she cooked her arroces and guisados.&nbsp;<\/p>\n\n\n\n<p class=\"\">First, place your caldero over medium heat and add your&nbsp;aromatics. Next, add the water or stock and seasonings. Taste and adjust seasonings, if necessary. The liquid should be heavily seasoned to ensure very flavorful rice! Then, add rice, gandules, olives, and rice. Bring to a boil, cover and reduce heat to low. Allow the rice to cook for 25 minutes, covered.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients for making rice with pigeon peas:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">Rice<\/li>\n\n\n\n<li class=\"\">Gandules (pigeon peas)<\/li>\n\n\n\n<li class=\"\"><strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/aceite-de-achiote-annatto-oil\/\" target=\"_blank\" rel=\"noreferrer noopener\">Annatto oil<\/a><\/strong><\/li>\n\n\n\n<li class=\"\"><strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/puerto-rican-sofrito\/\">Sofrito<\/a><\/strong><\/li>\n\n\n\n<li class=\"\">Tomato sauce<\/li>\n\n\n\n<li class=\"\">Chicken bouillon paste<\/li>\n\n\n\n<li class=\"\">Gandules (pigeon peas)<\/li>\n\n\n\n<li class=\"\">Pimento stuffed olives<\/li>\n\n\n\n<li class=\"\">Roasted red peppers<\/li>\n\n\n\n<li class=\"\">Bay leaf<\/li>\n\n\n\n<li class=\"\"><strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/homemade-adobo-adobo-puertorriqueno\/\" target=\"_blank\" rel=\"noreferrer noopener\">Adobo<\/a><\/strong><\/li>\n\n\n\n<li class=\"\"><strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/homemade-sazon-sazon-puertorriqueno\/\" target=\"_blank\" rel=\"noreferrer noopener\">Saz\u00f3n<\/a><\/strong><\/li>\n\n\n\n<li class=\"\">Cebolla en polvo<\/li>\n\n\n\n<li class=\"\">Ajo en polvo<\/li>\n\n\n\n<li class=\"\">Ground oregano<\/li>\n\n\n\n<li class=\"\">Cumin<\/li>\n\n\n\n<li class=\"\">Cilantro<\/li>\n<\/ul>\n\n\n\n<p class=\"\">As for seasoning, I use my homemade&nbsp;<strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/homemade-adobo-adobo-puertorriqueno\/\" target=\"_blank\" rel=\"noreferrer noopener\">adobo<\/a><\/strong>&nbsp;y&nbsp;<strong><a href=\"https:\/\/curlsnpearlsss.com\/es\/homemade-sazon-sazon-puertorriqueno\/\" target=\"_blank\" rel=\"noreferrer noopener\">saz\u00f3n<\/a><\/strong>. They can easily be made with spices you probably have in your pantry. In the flip side, if you add too little liquid, the rice will be grainy and also hard in the center. It\u2019s very important to get the ratio of rice to water perfect.<\/p>\n\n\n\n<p class=\"\">This will also depend on what type of rice you are using. My favorite rice to use is Jasmine rice. This rice requires 1 1\/2 cups of water for every cup of rice. Make sure you follow the cooking instructions on your package of rice.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Can I make arroz con gandules without pork?<\/h3>\n\n\n\n<p class=\"\">Yes! In fact, I never add pork to my arroz con gandules and it\u2019s just as flavorful as the rest of the recipes out here!&nbsp;<\/p>\n\n\n\n<p class=\"\">The key to achieving maximum flavor is not pork but <a href=\"https:\/\/curlsnpearlsss.com\/es\/puerto-rican-sofrito\/\"><strong>SOFRITO<\/strong><\/a>! I use my mother\u2019s sofrito recipe for all of my food and it really takes my dishes to the next level! Mami\u2019s sofrito is top notch!
