Over the years, I researched and tried recipes here and there until I finally found one that I absolutely love. This recipe is a combination of other recipes I\u2019ve tried with a little of my own flare added in. Here\u2019s how to make it.\u00a0<\/div>\n<div>\u00a0<\/div>\n<div>Ingredients:<br \/>\n<div>\u00a0<\/div>\n<div>\n<ul>\n<li class=\"ingredient\">2-3 lbs Yukon Gold Potatoes, sliced into\u00a0<span data-amount=\"0.125\">1\/8<\/span>-inch rounds<\/li>\n<li class=\"ingredient\"><span data-amount=\"1\">1<\/span>\u00a0small white or yellow onion, peeled and thinly sliced<\/li>\n<li class=\"ingredient\"><span data-amount=\"3\" data-unit=\"tablespoon\">3 tablespoon<\/span>s butter<\/li>\n<li class=\"ingredient\"><span data-amount=\"0.25\" data-unit=\"cup\">1\/4 cup<\/span>\u00a0all-purpose flour<\/li>\n<li class=\"ingredient\"><span data-amount=\"1\" data-unit=\"cup\">1 cup chicken stock\u00a0<\/span><i>(I always use water and Better Than Bouillon paste.)<\/i><\/li>\n<li class=\"ingredient\"><span data-amount=\"2\" data-unit=\"cup\">2 cup<\/span>s milk\u00a0(I recommend 2% or whole milk)<\/li>\n<li class=\"ingredient\">Salt or Adobo to taste\u00a0<\/li>\n<li class=\"ingredient\"><span data-amount=\"0.5\" data-unit=\"teaspoon\">1\/8 teaspoon<\/span>\u00a0pimienta negra<\/li>\n<li class=\"ingredient\">1\/4 teaspoon onion powder<\/li>\n<li class=\"ingredient\">1\/4 teaspoon garlic powder<\/li>\n<li class=\"ingredient\">1\/2 cup freshly-grated cheddar cheese<\/li>\n<li class=\"ingredient\">1\/2 cup freshly-grated Monterrey or Colby jack cheese<\/li>\n<li class=\"ingredient\">Freshly-grated Parmesan cheese, for garnish (optional)<\/li>\n<\/ul>\n<div>Instructions:<\/div>\n<\/div>\n<div>\u00a0<\/div>\n<div>\n<ol>\n<li>Preheat oven to 375\u00b0F.\u00a0 Grease a 9 x 13 inch baking pan and set aside.\u00a0<\/li>\n<li>Melt butter in a pot\u00a0over medium-high heat. Add onion, and saut\u00e9 for 4-5 minutes until soft and translucent. Stir in the flour until it is evenly combined, and\u00a0cook for 1-2 minutes. Pour in the chicken stock and whisk\u00a0until combined. Add the milk and seasonings and whisk until combined. Continue cooking for 1-2 minutes on medium low heat until the sauce thickens. Remove from heat and set aside.<\/li>\n<li>Spread half of the sliced potatoes in an even layer on the bottom of the pan. \u00a0Top evenly with half of the cream sauce. Then sprinkle evenly with half of\u00a0the shredded cheese blend.<\/li>\n<li>Top evenly with the remaining sliced potatoes, the\u00a0other half of the cream sauce and the remaining shredded cheese.<\/li>\n<li>Cover the pan with aluminum foil and bake for 40 minutes. At this point, if the potatoes look a bit dry, add some chicken stock or milk to moisten and continue to bake uncovered for 15-20 minutes, or until the potatoes are cooked through.<\/li>\n<li>Transfer the pan to a cooling rack, and sprinkle with Parmesan cheese.
