Puerto Rican Piononos
Puerto Rican piononos are sweet plantain rolls stuffed with savory ground beef or picadillo, as we say in Puerto Rico. They are topped with shredded cheese and baked to perfection.
Alternatively, you could fry the piononos instead of baking them. But either way, I’m sure you’ll enjoy this Caribbean dish which combines sweet and savory in the most perfect way!

Puerto Rican Piononos
Ingredientes
For Plantains
- 4 ripe plantains, the more ripe the better!
- 2 eggs, beaten
For Ground Beef (Picadillo)
- 1 lb carne molida
- 1/3 taza sofrito
- 1/2 taza salsa de tomate
- 1/2 tsp cumin
- 1/2 tbsp cebolla en polvo
- 1/2 tbsp ajo en polvo
- 1/2 tsp ground oregano
- 1/8 tsp ground black pepper
- 1/2 tbsp Adobo Healthy Rican
- 1/2 tsp Sazón Healthy Rican
- Chicken bouillon, to taste
- 1/2 taza beef or chicken broth
Intrucciones
For Ground Beef (Picadillo)
- Preheat oven to 375 degrees.
- Add ground beef to skillet and cook on medium high heat until brown. Drain excess fat.
- Add all other ingredients to the skillet. Stir to combine and cook for about 20 minutes on low heat.
- Add broth or water as needed until potatoes are soft and tender. Remove from heat and set aside.
Assemble Piononos
- Spray a muffin tin with cooking spray. Mash a small piece of plantain in each muffin cup to form the base of the pionono. Place strips around to form a cup.
- Fill each cup with ground beef and sprinkle with shredded cheese.
- Drizzle some egg over each cup to bind everything together.
- Bake at 375 degrees or until the cheese is melted. Serve with rice and beans and avocado salad.
